Ingredients
- Pan size: 9x13
- Parchement paper (optional)
- 1 cup (2 sticks) of salted butter - melted
- 2 cups light brown sugar
- 2 large eggs
- 1 tablespoon of vanilla extract
- 2 cups of all purpose flour*
- 1/4 teaspoon of salt
- 2 cups of coconut flakes + 1/2 cups for topping
- 1 2/3 cups of semi-sweet chocolate chips
- 1/2 cups of crush salted peanuts (optional)
Gluten Free Alternative*
- 1 1/3 cups brown rice flour
- 1/3 cup tapioca starch
- 1/3 cup potato starch
Directions
- Pre-heat oven to 350 degrees F.
- Whisk together the flours and salt. set aside.
- Combine the butter and brown sugar in a bowl and beat until well combined.
- Add the eggs and vanilla extract, stir well.
- Slowly add the flour mixture.
- Stir in the coconut flakes, chocolate chips, and crush salted peanuts (if you choose to add it).
- Spray the pan with cooking spray.
- (optional) feel free to use parchement paper if you like.
- Scrape the batter into a well-greased 9x13 pan and spread evenly with spatula.
- Sprinkle additional coconut flakes on top.
- Bake for 25-30 minutes or until the bars are light browned around the edges and set in the middle.
- Let it cool and cut into squares.
